New York Strip

The New York Strip is a beef steak from the strip loin portion of the Steer. The strip loin consists of muscle that does little work, which makes it tender, but not quite as tender as the Rib eye or Filet. The strip loin is a sizable muscle which allows it to be cut into larger portions.
