Recipes

Put down those ramen noodles and back away slowly. It’s time to brush up on those culinary skills. Don’t be afraid—cooking can be fun and easy and save you money. If you think you’re too busy to cook, think again. Listed below are some great recipes that are quick and simple to make. Hope you enjoy! (and if you have any favorite recipes of your own, please share them with us!)

Broccoli with Garlic and Sesame

Wash and trim 1 large bunch of broccoli and break it into florets. Steam the broccoli until just tender. Meanwhile, sauté 2 crushed cloves of garlic in 3 tablespoons of sesame oil until brown. Add the broccoli to the skillet with the garlic and cook over medium heat for 3-4 minutes, stirring occasionally. Serve with a squeeze of fresh lemon juice. 

Chili Cheese Dip

Put 4oz. of canned green chili peppers, 1 cup of sour cream, ½ cup chopped onion, and 1 8oz. package of cream cheese into a blender or food processor and process until smooth. Add cream as necessary for desired consistency. Makes 2 cups

Easy Meatballs

Mix 1 lb lean ground beef, 1 egg, 2 chopped cloves of garlic, 1 tablespoon of Italian seasoning, and ½ cup of cracker crumbs in a bowl and shape into small balls. Brown the meatballs over medium-high heat, turning often. Serve them with pasta and your favorite sauce.
